From our 10-day curing process to getting it delivered to your door, here are the answers to our most common questions.

Bacon FAQ: Everything You Need to Know

If you are here in the Bakersfield area, we can handle local delivery or set up a time for you to pick up your order. For everyone else, we ship out every Monday and Tuesday using UPS 3-day delivery so your bacon arrives fresh. If you are in a real hurry, we can also do overnight shipping—just let us know.

We ship our bacon frozen, so do not worry if it thaws a bit during the trip. Since we use a 10-day natural cure, it stays perfectly fresh. Once it arrives, put it in the fridge to use within two weeks, or keep it in the freezer for up to six months.

For the best results, skip the frying pan and use the oven. Set it to 350°F and lay the strips right on a baking sheet; you do not even need parchment paper. Start checking on it after about 12 minutes. Most people find it is perfect somewhere between 12 and 20 minutes depending on how crispy you like it.

You can, but we really do not recommend it. It takes us ten days to cure this bacon and ten hours to smoke it, so it deserves better than a microwave. Taking a few extra minutes to bake it in the oven really lets that smoky flavor and texture shine.

We are out at the local markets every weekend and would love to see you there. Find us at the River Lakes Farmers Market on Saturdays from 9:00 AM to 1:00 PM. On Sundays, we are at the Haggin Oaks Farmers Market on the corner of Ming Avenue and Haggin Oaks Boulevard.

Most store-bought bacon is rushed, but ours is a slow process. We use a natural 10-day cure and a 10-hour cold smoke to develop real flavor. For our Maple Bacon, we use actual maple sugar and organic syrup. You just cannot get that kind of depth from the mass-produced stuff at the grocery store.
